Frosted Carrot Cake Cookies Recipe (1)

Today we are getting together with all the sisters and their families for family dinner and an Easter egg hunt.

It will be anything but relaxing, but that’s how we roll.

We only have a couple more weeks of being together because Kristen and her family will soon be moving to Indiana and Steph and her husband are headed to California.

We have felt so blessed to have been lucky enough to all be in Utah for the last two years, so having these sisters be far away will be hard.

So, what do I do when I am feeling sad? I eat my feelings. And these carrot cake cookies are perfect for that. Soft, chewy, and covered in cream cheese frosting. They definitely help.

These are perfect for spring, but honestly, I’d eat them all year long.

What other frosting could I make if I don’t like cream cheese?

Cream cheese is my love language. If it has cream cheese in it, I need to eat it. However, I know it is not for everyone, which is totally understandable.

If you are in need of a different frosting recipe, we highly recommend making our Vanilla Buttercream Frosting. It is so delicious, and just as easy to make, if not easier.

We put it on just about everything, and these cookies will still taste absolutely amazing with a little buttercream frosting instead of cream cheese, on them.

I live in Indiana, but both of my sisters now live in different states (Virginia and New York). It's very difficult being separated from them (especially because that means I am also separated from all five of my niece/nephews), but thank goodness for Skype, texting, smartphones, and email...we keep in touch all the time! Although we were separated by many miles today, I feel like we spent Easter together considering all of the pictures and videos we shared! :)

  2. Camille (Six Sisters Stuff) says:

Thank you so much for sharing- thank goodness for modern technology! It won't make them seem so far away. What a blessing that you guys still have such a close relationship even though you are separated by so many miles! :) I hope that you had a wonderful Easter! :)

How do you store carrot cake overnight before frosting? ›

We all know cake is a delicate thing, and even if you let it cool completely to room temperature before frosting, it's still tender and fragile. Can you leave a frosted cake uncovered in the fridge overnight? ›

Why is my carrot cake frosting runny? ›

If yours is too runny, you've probably got too high a proportion of butter and/or milk. I don't want to say you've got too little sugar, because although this may be the case, if what you're going for is a less sweet frosting adding sugar would be kind of contradictory.

Which is sweeter buttercream or cream cheese frosting? ›

For instance, carrot cake, red velvet cake, and other moist cakes are commonly made with cream cheese frosting. Its tangy flavor is a perfect addition to spiced cakes, cupcakes, and breads, but it's less versatile than buttercream, which offers a sweeter flavor that pairs with just about any dessert you bake.

Does carrot cake with cream cheese frosting need to be refrigerated? ›
