These Frosted Carrot Cake Cookies are so simple, and delicious. They make a perfect Easter snack or dessert, that your whole family is sure to love.
Today we are getting together with all the sisters and their families for family dinner and an Easter egg hunt.
It will be anything but relaxing, but that’s how we roll.
We only have a couple more weeks of being together because Kristen and her family will soon be moving to Indiana and Steph and her husband are headed to California.
We have felt so blessed to have been lucky enough to all be in Utah for the last two years, so having these sisters be far away will be hard.
So, what do I do when I am feeling sad? I eat my feelings. And these carrot cake cookies are perfect for that. Soft, chewy, and covered in cream cheese frosting. They definitely help.
These are perfect for spring, but honestly, I’d eat them all year long.
What other frosting could I make if I don’t like cream cheese?
Cream cheese is my love language. If it has cream cheese in it, I need to eat it. However, I know it is not for everyone, which is totally understandable.

These Frosted Carrot Cake Cookies are so simple, and delicious. They make a perfect Easter snack or dessert, that your whole family is sure to love.

Ingredients
- ½ cup butter softened
- ½ cup brown sugar
- ½ teaspoon vanilla
- 1 egg
- 1 ½ cups flour
- ¾ teaspoon cinnamon
- ½ teaspoon nutmeg
- dash cloves
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup grated carrots
- ½ cup raisins optional
- ½ cup chopped walnuts optional
Cream Cheese Frosting
- ¼ cup butter softened
- 8 ounces cream cheese
- 1 teaspoon vanilla
- 3 cups powdered sugar
Instructions
Preheat oven to 350 degrees.
In a large bowl, cream butter, brown sugar, and vanilla. Add egg and mix well.
Add flour, cinnamon, nutmeg, cloves, baking soda, salt and mix until completely combined. Fold in carrots (and raisins and walnuts if you are using them).
Place spoonfuls of dough on ungreased cookie sheets and bake for 9-12 minutes. Remove from cookie sheet and let cool.
Frosting
After the cookies have cooled, prepare cream cheese frosting.
Cream butter, cream cheese, and vanilla together, then add powdered sugar. Add more or less powdered sugar, depending on how thick you want the frosting to be.
Frost cooled cookies and top with additional walnuts if desired.

I live in Indiana, but both of my sisters now live in different states (Virginia and New York). It's very difficult being separated from them (especially because that means I am also separated from all five of my niece/nephews), but thank goodness for Skype, texting, smartphones, and email...we keep in touch all the time! Although we were separated by many miles today, I feel like we spent Easter together considering all of the pictures and videos we shared! :)
