With only 5 ingredients this lolly slice recipe is so delicious - a simple twist on classic Kiwi lolly cake.
After the popularity of my classic lolly cake I thought it was time I posted a recipe for my lolly slice. I actually end up making it in slice form more often as it is much quicker to make in a slice tin than form into logs etc.
This lolly slice recipe is simple to make and takes a few minutes. It only has 5 ingredients: condensed milk, coconut, malt biscuits, butter and fruit puffs. You can use explorer lollies, fruit puffs or soft banana lollies work well too.

HOW TO MAKE Lolly Slice:
First of all melt the butter and condensed milk together. Then add to the crushed biscuits and chopped fruit puffs.

Lolly Cake in some form or other has been around since the 1940's. It is actually more of a 'log' than a cake. Made with crushed malt biscuits, sweetened condensed milk, melted butter, and chopped lollies (fruit puffs or similar) which are all combined and shaped into a roll that is then coated in desiccated coconut.
There are lots of variations around. You can use fruit puffs or bananas. I have also seen versions with liquorice allsorts, clinkers and marshmallows. What biscuits can be used in place of malt biscuits in lolly cake?
The exact origins of lolly cake are unknown. Lolly cakes are known to have been consumed in the 1940s, but were not commonly available until the 1960s in supermarkets. Lolly cake is similar to chocolate salami and fifteens.

'Lolly' is a New Zealand word for confectionary - British people use 'sweet' and Americans 'candy'. Australians also use lolly. It comes from the older British word 'lollipop' which referred to confectionary but came to have a narrower meaning in Britain of a sweet on a stick or an ice block ('ice lolly').
Why does my cake have a gummy streak in the center? Developing too much of the flour's gluten can make the cake rise beautifully in the oven, but sink as soon as you pull it out. The sinking part is what makes the dense and gluey streaks. This can be result of over-creaming the eggs, butter and sugar.
Like cream pies, desserts filled with whipped cream or pastry cream—think eclairs, fruit tarts, cream puffs—just won't hold up in the freezer. Eat these treats as quickly as possible and share with friends and neighbors.
Cakes that are packed with flavour including lemon drizzle cake, carrot cake, chocolate cake andfruit cake freeze very well and will retain their flavour for up to three months. If you want to freeze a cheesecake for example, the good news is that it is possible.
There is a time when the freezer is your friend. Cake should never be iced and decorated the same day they are baked. A freshly baked cake's internal structure is too soft to handle the rigors of the decorating process.

Cakesicles are basically a cake mixed together and molded into popsicles using a cakesicle mold.
