Cornbread muffins are pretty classic this time of the year.

While we like to eat our cornbread as slice of cornbread or as part of another dish, muffins remain a popular option as well. That is because muffins are all ready in individual portions and they can be eaten while on the go. I like baking extra muffins because my family can eat them later or even take them with them when they are heading out the door. Also, we can probably agree that cornbread can taste good warm or cold. Although, the smell of warm cornbread muffins just out of the oven is a smell that I do like a lot.

As a bit of a disclosure, it would be impossible to make cornbread 100% sugar free.
That is because we use cornmeal as the most important ingredient in it. Cornmeal has about 2.25 grams of sugar per cup in it. This recipe calls for 1 ¼ cup of cornmeal (about 3.125 grams total sugar) and will yield about 12 regular sized muffins. Thus, each muffin will have about .26 grams of sugar in it. Technically, the FDA says that something needs to have less than .5 grams of sugar in it to be sugar free.

However, there is a such thing as gluten free cornmeal.
Regular cornmeal does not come from wheat which contains gluten. However, sometimes manufacturers will add extra ingredients to their corn meal which may also add gluten. As a result, you can buy actual gluten free cornmeal on Amazon. Amazon also has really cool baking pans for cornbread muffins.

FAQs

Why do my cornbread muffins fall apart? ›

Avoid over-mixing the batter.

Cornbread batter should still be lumpy when you put it in the oven. If you are mixing it until it's smooth like cake batter, that could be the cause of your crumbly cornbread! Stop blending as soon as all the ingredients are mixed together.

What does adding an extra egg to cornbread do? ›

The yolk will make the texture more dense and smooth, a bit brownie-like, while the fact that your original batter was too thick means that the additional liquid will help the baking powder achieve better leavening, giving you an airier texture.

What ingredient prevents muffins from falling apart? ›

Pudding will help the muffin keep its structure and give the texture a chewy crumb with a nice little bounce that won't crumble apart.

How do you make cornbread less crumbly Jiffy? ›

You could add a couple tablespoons of oil (corn, olive or any) but I would also suggest that reduce the baking time just slightly. I would start checking for doneness five minutes before the total suggested baking time has been reached.

Can Type 2 diabetics eat cornbread? ›

Yes, you can eat corn if you have diabetes. Corn is a source of energy, vitamins, minerals, and fiber. It's also low in sodium and fat.

How many carbs in a sugar free muffin? ›

The Bakery No Sugar Added Blueberry Muffins (1 muffin) contains 43g total carbs, 23g net carbs, 16g fat, 5g protein, and 340 calories.

Does Jiffy cornbread have sugar? ›

Ingredients. WHEAT FLOUR, DEGERMED YELLOW CORN MEAL, SUGAR, LARD (HYDROGENATED LARD, BHT AND CITRIC ACID PRESERVATIVES), CONTAINS LESS THAN 2% OF: BAKING SODA, TRICALCIUM PHOSPHATE, SODIUM ACID PYROPHOSPHATE, MONOCALCIUM PHOSPHATE, SALT, NIACIN, REDUCED IRON, THIAMINE MONONITRATE, RIBOFLAVIN, FOLIC ACID, WHEAT STARCH.

What are the black specks in Jiffy cornbread mix? ›

The black specks are simply naturally dark pieces of the pericarp (skin) of the corn, where the tip of the kernel attaches to the cob. The color of the specks will vary by crop and year. They are the same as those commonly seen in hard taco shells, corn or tortilla chips, cornmeal, and natural whole corn products.

What are the black spots in cornbread? ›

They are a dark part of the kernel that sometimes gets ground up with the rest of the corn. Nothing to be concerned about.

Can you use cupcake liners for muffins? ›

You will see some liners labeled specifically for cupcakes or muffins but the two are interchangeable. Make sure you buy the correct size muffin liners for your pans. Most muffin and cupcake liners are affordable and a pack can be used on more than one batch of cupcakes.

Why do my Jiffy corn muffins fall apart? ›

Why Is Jiffy Mix So Crumbly? The recipe on the box doesn't give the batter as much moisture as I like in my cornbread, which is why it can sometimes turn out crumbly. Adding in the sour cream and vegetable oil makes a huge difference and makes the best moist cornbread.

Why do my muffins rise and then fall? ›

Incorrect oven temperature (not pre-heated) prior to placing the muffin tray in. Too much batter in each muffin tin. The batter will rise, but crack, then fall/deflate. Generally you should leave about a quarter inch/6.35mm space empty per muffin.

What happens if you overmix muffin batter? ›

Realize that overmixing can cause muffins to be tough, bake unevenly, create elongated holes (or tunnels) and/or form peaked tops.
